Here's a newbie photographer question for you 😊-- Based on your experience, what types of photography gigs are worthwhile? And which are not? 

 

How do you choose between boring photography gigs that pay well vs. fun gigs that pay very little?

Don't choose, do both - that's the life of a photographer

I honestly don't know the answer but Michael Caine said he aims to be too busy to be able to pick up his awards, if it works for an actor it should work for a photographer.

If you find shooting corporate headshots boring, you very likely won't get the gigs for shooting corporate headshots.   Photography is what you do with the subject, not what the subject is.

As a pro, I shoot whatever pays money so I can put food on the table, fuel in the car and keep herself happy, whether it bores me senseless or not.  That's the reality.

If you intend to make a living at this, then I'm afraid you've answered your own question - take the "pay well, worthwhile" jobs every time, no matter how boring.
I can't remember how many times I've almost fallen asleep at some dreadfully boring conference or other, but I'm never, ever bored banking the cheque.
