Mark, me thinks I maybe have too many pasta shots. I did not recognize that bowl of rigatoni, except that's my blue napkin.

 

I learned to cook Italian in Rome by watching the nonne (grandmothers). More recently, I'm into veggie stuff (with the same napkin):
